There is much to be said about the phrase home made. Sure some people can say they made it themselves, but it really is not home made if a store bought pie crust is used. Of course that is my personal opinion. If you make something at home I guess you could say it was home made. I should probably use the phrase, made from scratch.

I am as guilty as the next person. I tried recipe after recipe but I could not get the taste I remembered in a pie crust. One would say use oil, while another would call for shortening. Still others would say to use a combination of both and add an egg. They all said to use cold water and roll out on a lightly floured surface to the desired size and thickness.

Every time I would roll out the dough it would stick to the floured surface. If I put more flour than was called for the dough would get dry and break before I got it to the pan. If I re-rolled it and did manage to put it in the pan and bake my pie, the crust was tough and hard as cardboard. I was getting disgusted because I have an antique cupboard with an enamel surface that is perfect for kneading bread on. My great grandmother had the same cupboard and her pies were perfect.

So I gave up on recipes again and started experimenting. After numerous disasters and a few close calls I finally hit a home run with this formula. I use lard, not shortening and all purpose unbleached flour. Measure 2-cups flour into a bowl and 1/4-teaspoon salt. With a pastry blender cut in 1/2-cup cold lard until it looks like coarse cornmeal. Then add another 1/2-cup cold lard and cut it in until the lard is the size of peas. Then sprinkle over that mixture 1/4-cup of ice water-1-tablespoon at a time and mix the dough with your hands. When the dough forms a ball cover it and refrigerate it for at least 1/2-hour.

Now you will have a dough that you can use a lot of flour to roll it out with. It should not stick to anything and if you have to re-roll it, it will not be tough as cardboard. So go ahead I dare you!

But … who on earth could face boiling bones for hours on end
during the scorching Spanish summer weather, not to mention
preparing the soup once the stock is made? I dont think it
would tickle anybodys fancy to then have to tuck into a
piping-hot soup!

For this reason, the Spanish came up with their wonderful,
ice-cold soup - gazpacho - beautifully colorful, packed with
goodness, cheap and simple to prepare, no cooking and … most
important of all, an absolute delight to drink.

Traditional gazpacho originates from romantic Andalucia - that
large, exotic southerly region of Spain which is home to such
extensive Arabic influence.

The chilled, raw soup was originally made by pounding bread and
garlic with tomatoes, cucumber and peppers but, nowadays, your
electric blender renders this effortless! Olive oil endows it
with a smooth, creamy consistency and vinegar adds a refreshing
tang - just what you need when life gets too hot to handle!

The spicy soup should be served in true Spanish style with small
bowls of accompaniments - finely chopped peppers, cucumber,
onion … even hard-boiled eggs and croutons, if you feel up to
it! Guests will then sprinkle what appeals to them on the soup.

Traditional gazpacho is tomato-based, with most Spanish families
having developed their own, unique recipes. However, nowadays,
you will also find gazpacho recipes that have nothing to do
with tomatoes - white, almond-based gazpachos, fruit-based
gazpachos, etc.

Do you suffer from insomnia? Could be that drinking gazpacho is
the answer, for in Pedro Almodovars 1987 film “Mujeres Al Borde
De Un Ataque De Nervios”, various characters help themselves to
the soup and promptly fall asleep!

However, dont fall asleep just yet as you havent read over the
recipe!

Ingrediants for 4 servings:

- 4 ripe tomatoes
- 1 onion
- red pepper
- green pepper
- cucumber
- 3 cloves garlic
- 50 g bread
- 3 dessertspoons vinegar
- 8 dessertspoons olive oil
- Water
- Salt/pepper
- chilli pepper (optional)

Garnishings:

- 2 hard-boiled eggs
- finely chopped onion
- finely chopped red pepper
- finely chopped green pepper
- finely chopped cucumber

Method:

1. Break up bread and soak in water for 30 minutes.

2. Skin tomatoes, remove seeds and stalks from peppers.

3. Peel cucumber, onion and garlic.

4. Chop onion, garlic, tomatoes, peppers and cucumber.

5. Place in electric blender.

6. Squeeze out excess water from bread and add to blender.

7. Add oil and vinegar.

8. Blend well.

9. If necessary, add sufficient water for soup-like consistency.

10. Pour into a bowl with ice cubes.

11. Fridge for a couple of hours.

12. Serve in bowls, with garnishings in separate dishes.

Gazpacho is best enjoyed sitting in the shade, looking out onto
an azure sea, blue sky and golden sun and sands!

I became a vegetarian in the early 80s. The Czech refugee I had lived with forbade any meat products from entering the little hovel we called home. I didnt own a car then, and only traveled as far as my Raleigh three-speed English racer could take me. On Fridays that was to the home of a well-respected psychotherapist whose house I cleaned. When my chores were finished Id welcome myself to her stocked pantry, and indulge on a simply prepared can of Star-Kist. I had to time that lunch well enough in advance of my homecoming as not to carry any lingering fish on my breath, otherwise I might not hear the end of a long speech about how Krishna may have incarnated into that same tuna that I had so ravenously devoured.

At nineteen years old, my relationship skills were practically non-existent. We argued about everything and nothing at all. I would storm out of the cabin and head to the deli in the center of town, the one with the huge loaves of European style bread in the front window. The ticket was always the same: turkey piled high on raisin-pumpernickel with Russian dressing, and a can on Dr. Browns Cel-Ray tonic on the side. There was a hidden spot behind one of the galleries where a stream ran, and I could sit in silence while I mulled over the thought of living alone. Each stolen bite of that sandwich brought me closer to a sense of myself reminding me of all the cold-cut meals I had consumed as a child. When the last crumb was finished, and I had licked the last drop of dressing from my fingers, I would go back to the place I called home, knowing full well that it would just be a matter of days before I returned to the same spot.

Preparing dinner, in those years, wasnt a simple as braking open a bag, or defrosting a pot pie. We had no freezer compartment in the four foot high GE that was packed with containers and bags from the food co-op. A big bag of carrots for juicing was always on the bottom shelf, and bags of exotic flours stuffed the middle ones. We did eat well, though. Every night there was a variation on a tofu dish with fresh vegetables from our garden. I became quite proficient at cooking with soybean curd, and one year entered the local tofu cook-off. My non-fish version of Gefilte, aptly named Gefilte-Fu took first prize and brought home Mollie Katzdens bible to vegetarianism The Moosewood Cookbook. Oh, how I adored that book! Twenty-five years later, its soy sauce stained pages crammed with additional index cards with recipes like lentil loaf and mock salmon salad still sits on my bookshelf.

We lived a simple life with four dogs, a cat, and a semi-permanent resident who slept in his old VW bus. I cant tell you his name because he didnt go by one. No Name was the moniker that some folks referred to him. I just called him Doctor, bestowing the title half out of respect for his age, which was somewhere around middle age, and half because of my perception of his spiritual knowledge. He viewed himself as a Yogicelibate, and living a life of renunciation. His constant presence in our 200 square foot cabin, though, was a blessing and a curse. At best he was a mentor who challenged the presumptions of my middle-class upbringing, and at worst, a drain on my food stamp allotment.

There was no door on the bathroom. In fact, the toilet and bathtub were in the kitchen. So I learned quickly how to shed excess modesty or did my business when the cabin was vacant. Doctor likened himself to Richard Alpert, who through education and doses of LSD, had had a spiritual awakening, and as a phoenix rising from the ashes of his former self, emerged as Ram Das. We dosed ourselves many times in those years with the psychedelic sacrament and each trip had a meaningful lesson. The long hours of meditation and mind expanding thought were always followed by a broth of root vegetables, which I had prepared the previous night.

The Doctor and I once hitchhiked together to a Rainbow Family Gathering in the Blue Hill Mountains of West Virginia. We each ran around naked for a week, were fed curried goulash by the Hare Krishna Kitchen, and played drums until the early morning hours. I learned how to make whole wheat japatis from The Sufi Kitchen, and took instruction on meditating with a pyramid on top of my head. I saw the Doctor get in the sack one night with a young hippie girl. After that my impressions of him were never quite the same. I packed up my sleeping bag and hitched home to Woodstock alone.

I still go to the health food store and buy marinated tofu salad, but its the one container that could sit in the fridge without the risk of being ransacked as a midnight munchie by my carnivorous family.

Lentil Loaf

1 cup green lentils cup barley4 cup water1 teaspoon sea salt1 cup bread crumbs or cracker crumbs1 clove garlic, minced1 medium onion, minced1 rib celery, sliced thinly2 eggs, beaten⅛ teaspoon nutmeg

Directions:

1. Add lentils and barley to boiling salted water. Allow to boil for a minute, then reduce heat and simmer with a lid ajar for about 40 minutes or until most of the water is absorbed. Remove from heat.

2. Add bread or cracker crumbs along with remaining ingredients and mix well.

3. Place mixture in a well oiled 9×5x3 inch loaf pan.

4. Bake at 350 degrees F. for 35 minutes.

5. Allow to cool for 15-20 minutes before inverting over a platter to serve.

Serves six to eight.

But in that you have no guarantee to be sure. There are many companies that are worshipping only the decrease in costs that taking support services overseas will net you. But while there is a cost savings, it is at the cost of customer satisfaction. That satisfaction decreases in direct proportion to how long it takes to get an issue dealt with as well as the frustration level of the poor customer that has to make the call.

While there are more and more companies that are seeing overseas as a success move, and while I can agree we are getting to become more of a global community, the fact is I would like to be able to speak in my home language when I need to check my checking account or to get my Dell computer to boot up properly. On thing your standard CEO and CFO do understands is that a lack of happy customers will lead to less customers. It is ten times harder to get a new customer then to keep the one they already have. And it is many times harder to get back a customer that has left with dissatisfaction in their hearts.

As a computer expert, I find that there are few times that I need to turn to any company for assistance with getting them to work the way I want them to work. This is something that I have been blessed with, for work, when not writing. I often assist technical support issues. I can hear in the voices of the customers how they get frustrated, and I can hear it in my own when I take up the call for when I am in need of assistance. It is human nature I am sure, but why make it harder if we do not have to make it so?

Add to this communications issues, and a simple problem becomes severe. Sure it is more expensive to create customer and technical support structures domestically, but at the same time, it is better for the customer involved. If for one would not have a job here in the states if my company had decided to outsource their technical support team. But the cost is still not as much, because we can be taught far easier with management right in the same building at the rest of the team. In the case of my international company, most of the company is in New York City. We need to me there or be close to there or we can not serve them well. We have all these people that work with us that are not trained as technical computer specialists. That is not their job, instead that is our job.

In the end, we need to serve the needs of the customers, because if we do not serve them, we just will not have them any more.
