Cooking With Stainless Steel Cookware

Iron is the main ingredient in steel. To make stainless steel for cookware, additional alloys are added to the iron. Titanium, Copper and Nickel, among other ingredients, can be added in various percentages. However, to be considered stainless steel, a minimum of 12% Chromium must be in the mix.

In most cookware, the stainless steel is only used as the cooking surface and not the entire product. In most instances, aluminum is used as the primary ingredient in making the cookware mold, because aluminum heats faster. However, aluminum is not a good product to be used as cookware because it can be unsafe for humans to digest. So, it is added as the coating to make the final product safe, easy to clean and durable.

History:

In 1913 a man was working on a project to reduce rust in rifle barrels. During this project, he was mixing different metallic compounds and accidentally discovered what we know of today as stainless steel.

There are many different types and configurations with different levels of metal alloys added. One type could be a very different mixture than another type.

Quality:

To understand the compositions available, it is best to understand the rationale for adding the different metal alloys. Although other compounds, such as Titanium and Copper could be added, as well as non-metallic compounds, the ingredients of Chromium and Nickel are primary in determining quality.

Chromium is added because it is an ingredient that resists rusting and corrosion. It also provides the high gloss normally associated with cookware.

Nickel is added because it has the ability to withstand higher heats and makes the final product more durable.

When looking at stainless steel cookware, quality is easy to recognize. Manufacturers usually add the Chromium/Nickel concentration in the iron as a notation on the cookware. When looking at cookware for sale, one will see the notation of 18/10. This means that 18% of it is Chromium and 10% is Nickel.

Other notations include 18/0, which means that 18% of the it is Chromium, but no Nickel has been added. Because Nickel adds additional properties of durability and ability to withstand higher heat, the highest quality for cookware is 18/10.

Cleaning and Using

Chromium works by mixing with oxygen in the air. For this reason, the storage of leftovers in it is not recommended. When chromium cannot mix with oxygen, bacteria can trap within the steel itself. When used properly cookware can be very hygienic.

To help spread heat evenly, it is best to find cookware with a heat diffusing base. This alleviates any negatives associated when the heat does not always distribute properly.

Cleaning with dish soap and water is best, but one can use dishwasher if approved by manufacturer. It can scratch so abrasive cleaning products and bleach are not recommended.

Although called stainless steel - it might be best to remember that the steel is stain resistant. When used improperly, it can stain, rust or corrode.

Gas Barbecues - Real Taste With Less Exhaustion

Barbecue is a slow process of cooking in a low temperature that is about 300-400 degrees Fahrenheit for about 8 to 18 hours. The low temperature creates smoke and it gives barbecue the characteristic flavor. Normally the food to be cooked is kept in a separate chamber not in contact with the source of heat. To produce the smoke charcoal, wood-chunks or smoldering logs will be used.

This type of cooking is very helpful to cook large pieces of meat. Different heat source can be used like charcoal, gas, wood etc. There are regulators for the burners which help keep the process in our control and gives confidence of cooking food properly. There are no dirty hot ashes which make the cleaning work tiresome. The charred remains after cooking should be scraped off with wire brush and should be wiped off with vegetable oil.

In the charcoal grills the traces of coal tar may be coated over the food material. This disadvantage is over come by using gas barbecues. The wood barbecues will have their characteristics flavor imparted to the food based on the wood used.

In the gas barbecue the wood smoke flavor can be imparted by using the smoker box. The smoker box is a perforated box with soaked wood chips in it which is placed over the heat and under the cooking grill. Some of the gas barbecues will have built in smoker box.

Gas barbecue grill consists of a cooking chamber. In the cooking chamber there gas burners will be placed beneath and above that there will be grids which hold the heat absorbing material like lava rock.

In the higher end grills multiple sear bars which are made of conducting materials are used. A cooking grid is placed above the sear grids or lava rock leaving some space on which food stuff will be placed. The burners are connected to the gas outlet. The gases used for barbecue cooking include natural gas or propane which is supplied from a tank under the cooking chamber.

Gas barbecue has got many benefits over the other types of barbecues. It is easy to use. It gets ignited in a touch of button and reaches cooking temperature in about 10 minutes. It helps the meat juices to vaporize back into the food and give the real flavor of barbecue which avoids the chaos of using charcoal.

Since the fuels used will produce wet heat the texture of the foodstuff may be changed. This is also an advantage that the food stuff which takes long time for cooking like ribs since the stuff will not dry out in the process of cooking.

7. Bread. I am talking about the wholesome wheat bread. Never allow white bread to cross your lips.

8. Cheese. Make your own vegetarian cheese; it is great, tastes better too!

You have just purchased the outdoor barbeque you have always wanted, and now you are ready to break it in. Your mouth is watering for a juicy steak, and you are anxious to impress your guests with your new barbeque and grilling skills. But do you know what the best grilling steaks are to use? You may have the perfect marinade in mind, as well as your own special blend of seasonings. Choosing the right type of meat is just as important as the type of flavoring you use.

While so much of steak grilling is subject to individual taste palates, some steaks lend themselves very well to barbequing endeavors. There are a number of factors to keep in mind when choosing cuts of beef for grilling. For example, one aspect to consider is the amount of marbling on the steak (i.e. how much fat the beef has running through it). While many people insist on avoiding the fat, it is actually this fat that contributes significantly to the flavor of the beef when its cooking. Some people instinctively choose top sirloin, because it is leaner and tends to be less expensive. However, because of its low fat content, sirloin steaks tend to also dry out faster and be less juicy, as well as a little tougher. In addition, the marbling on a steak helps to insulate the meat and keep it from overcooking.

In general, the most tender steaks available are tenderloin and strip (also called New York) steaks. But porterhouse and rib eye steaks can also be quite tender and flavorful, which means that you can have great-tasting grilled steaks for your guests without breaking the bank. Keep in mind that porterhouse steaks are especially flavorful, not only because of the level of fat, but because they also have a section of tenderloin on one side of the bone and a section of strip steak on the other side.

Another factor to keep in mind is the type of grade of the beef you are buying. The U.S. Department of Agriculture assigns specific grades to meat according the level of quality of the beef. Prime grades are considered the best, but these are widely used by restaurants and tend be bit a little harder to find in the average grocery store. However, many supermarkets have begun carrying some cuts of prime beef in small amounts, and you may be able to secure prime cuts from a local butcher as well. These cuts are a bit more expensive. They tend to have to most marbling in them, making them especially juicy. Alternatively, Choice grade steaks will work wonderfully for barbequing, as they still have a generous amount of marbling in them. Select grade beef will tend to be the least tender, they can dry out quickly, particularly if you are relatively inexperienced with your grill.

The thickness of the steak you choose will also determine the kind of results you will get when using the steak on a grill. A relatively thick steak will help to keep the meat from drying out too quickly or overcooking. As a guideline, you should always choose steaks that are at least of an inch thick. Ideally, you should shoot for steaks that are about one inch to an inch and a half. Finally, you should know how long the steaks have been aged. Beef cuts that have undergone some degree of aging are likely to have characteristics that is more tenderized and mellowed in flavor. Whenever possible, ask your butcher about the age of the steaks you intend to purchase.

Aluminum Aluminum baking pans are inexpensive and lightweight, and therefore popular. However, they do not brown baked items well, and they may react with acidic foods. Upon deep consideration of the matter, sooner of later you will have to agree that the concept of cookbook came into existence the very second cavemen struck two rocks together to produce fire. What to do with the fire? Aha! Cook that wild boar sitting around over there? But how many rocks do I need and for how long? Do I turn the boar over to get crisp on both sides? Do I hang it from a sharp stick from that tree or do I put the meat directly on the hot rocks? Hmm…There must be something else to eat with the broiled boar. Yes! How about a nice salad of mixed weeds and flowers, sprinkled with a handful of crunchy beetles? Maybe tomorrow we can spear a big fish for everyone to share. Watch out for the bones, boys! Well save the long, sharp bones to sew up our winter skins.

And so, as they say, cookbook history was born.

Cookbooks were used in every literate society, in one extent to another, from time immemorial. One of the most-well-known of these ancient treatise on food and drink preparation is that written by Athenaesus in the 2nd century. Apicius, another famous gourmet from these earliest times of written history, could also be considered a gourmand as his extravagant banquets eventually drove him to bankruptcy and suicide. Talk about partying to show up the Joneses!

Moving along our culinary timeline, Medieval Europe published a fair number of cookbooks. In 1394 came Le Mnagier de Paris, one of the first French cookbooks, with recipes for frogs and snails.

Cookbooks took off with the proliferation of the printing press. The rising middle class wanted books to tell them how to cook. Over 100,000 copies of the French cookbook Shilling Cookery for the People by Alexis Soyer (1809 - 58) made their way into households all over Europe and England.

When recalling the history of the cookbook, the name of Fannie Merritt Farmer rises to the top of first-class chefs and writers. Farmer was the name to be remembered first for her 1896 editorship of the Boston Cooking -School Cook Book. Fannie Farmer was responsible for the standardization of cookbook measurements. Thanks to her, we no longer have to worry if our roasted meat is going to taste like a salt-lick!
